Unlike our Northern Italian night, our Southern Italian night was less than successful. Note to self: Vodka sauce is not nearly as delicious when made with skim milk instead of heavy cream (upper right-hand corner, with salmon and spinach—it looks a lot better than it tasted): As my friend Marc said, “Some foods are just meant to be unhealthy.”

I agree, sometimes you just have to forget about the fat grams, and go for it. Channeling Paula Deen from time to time never hurts anyone (if you don’t count snugger fitting jeans).

I have a friend who is an excellent cook who makes every recipe the first time exactly as written and then decides what might be changed to suit personal preferences but still maintain its integrity. Might be the way to go.
